Falafel bowl 

Ingredients for 2 persons

  • 1 potato 
  • 7 oz green beans 
  • 5 oz wild rice 
  • 1 container of hummus 
  • 3 tbsp Greek yogurt 
  • 3,5 oz falafel 
  • 1 lime 
  • 1 handful of cilantro 

Preparation

Bring a pot of water to a boil. Peel the potato and cut it into small cubes. Trim the ends of the green beans and cook them together with the potato cubes for about 10-12 minutes until they are al dente. Drain and set aside. Bring another pot of water to a boil and cook the wild rice for about 10 minutes. 

Meanwhile, combine the container of hummus and Greek yogurt in a saucepan and heat it up. Add the potato cubes and green beans and let it simmer for about 5 minutes. Heat a dash of oil in a skillet and fry the falafel balls for about 3 minutes on each side. Cut the lime into wedges. Drain the wild rice and serve it with the hummus sauce, falafel balls, lime wedges, and cilantro on top.
