Tacos with a twist

Ingredients for 4 people: 

– 12 taco shells   

– 12 mini tortillas   

– 400 grams of ground beef (about 14 oz)   

– 250 grams of mixed beans (about 9 oz)   

– 100 grams of corn (about 3.5 oz)   

– 1 red onion   

– 1 clove of garlic   

– 1 avocado   

– A bit of lettuce   

– 2 tomatoes   

– A bit of lime juice   

– 125 ml sour cream (about 4.2 fl oz)   

– Taco seasoning   

– Grated cheese   

Preparation: 

1. Finely chop the onion and garlic. Heat some oil in a pan and sauté the onion until soft, then add the garlic. Add the ground beef and cook until browned. Prepare the taco shells according to the package instructions. 

2. Once the beef is cooked, add the taco seasoning, drained bean mix, and corn. Dice the tomatoes and add a bit more than half of them to the pan. Stir well. 

3. For the guacamole, mash the avocado and mix in some lime juice. For extra flavor, you can add a bit of chopped onion and some of the remaining tomatoes. 

4. To assemble, take a taco shell and wrap a mini tortilla around it. Fill with the beef mixture, lettuce, guacamole, sour cream, and grated cheese. Repeat for all tacos.
