Stuffed potato 

Ingredients (for 6 servings)

  • 3 large potatoes 
  • 4,5 oz bacon strips 
  • 3 spring onions 
  • 4 fl oz sour cream 
  • 2 oz grated cheese 
  • Chives 
  • Cherry tomatoes 
  • 1 tsp mustard 


Boil the potatoes with their skin on for 15 to 20 minutes until tender. Preheat the oven to 350F and prepare the filling. Cook the bacon strips in a pan until crispy. Chop the spring onions into small pieces and add them to the bacon. 

Take a bowl and combine the bacon, sour cream, mustard, chives, pepper, and grated cheese. Once the potatoes are cooked, cut them in half lengthwise. Use a spoon to scoop out some of the flesh and fill each potato half with the mixture. Place the potatoes in the oven for 15 to 20 minutes. 

After removing the potatoes from the oven, garnish them with cherry tomatoes and a sprinkle of chives. Serve and enjoy!
