Spooky halloween pumpkin soup recipe 

This creamy and delicious pumpkin soup is perfect for a cozy Halloween night. With a hint of spice and a touch of sweetness, it’s the ultimate fall comfort food that will delight your guests! 

Ingredients: 

– 2 lbs (900g) pumpkin (peeled and diced) 

– 1 medium onion (chopped) 

– 2 cloves garlic (minced) 

– 1 tbsp olive oil 

– 4 fl oz (120 ml) heavy cream 

– 24 fl oz (700 ml) vegetable broth 

– 1 tsp ground cinnamon 

– 1/2 tsp ground nutmeg 

– 1/2 tsp ground ginger 

– Salt and pepper to taste 

– 2 oz (60g) pumpkin seeds (optional for garnish) 

– A pinch of smoked paprika (optional for garnish) 

you can add a spider as decoration (additional) 

Instructions: 

  • 1.Prepare the pumpkin: Peel the pumpkin, remove the seeds, and dice it into small cubes. Set aside. 
  • 2.Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic. Sauté for about 5 minutes, until soft and fragrant. 
  • 3.Cook the pumpkin: Add the diced pumpkin to the pot and cook for another 5 minutes, stirring occasionally. The pumpkin will start to soften. 
  • 4.Add broth and spices: Pour in the vegetable broth and add the cinnamon, nutmeg, ginger, salt, and pepper. Stir well to combine. 
  • 5.Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for 20-25 minutes, or until the pumpkin is completely tender. 
  • 6.Blend the soup: Once the pumpkin is soft, remove the pot from the heat. Use an immersion blender or transfer the soup to a blender and blend until smooth and creamy. 
  • 7.Stir in the cream: Add the heavy cream to the blended soup and stir well. Reheat the soup over low heat if needed, but do not boil. 
  • 8.Serve: Ladle the soup into bowls and top with roasted pumpkin seeds and a sprinkle of smoked paprika for extra flavour and a spooky touch!
