Salmon poke bowl

Ingredients: 

– 200 grams of fresh salmon, cut into cubes (about 7 oz)   

– 1 cup of sushi rice, cooked according to package instructions   

– 1 cup of edamame, cooked and cooled   

– 1 cup of radishes, sliced   

– 1 cup of red cabbage, finely chopped   

– 1 cucumber, thinly sliced or cut into strips   

– 1 sheet of nori (seaweed), torn or cut into small pieces   

– 2 spring onions, finely chopped (optional, for garnish) 

For the poké bowl sauce: 

– 3 tablespoons soy sauce   

– 1 tablespoon sesame oil   

– 1 tablespoon rice vinegar   

– 1 teaspoon sriracha (optional, for a bit of heat)   

– 1 clove of garlic, finely chopped   

– 1 teaspoon grated ginger   

– 1 teaspoon honey or agave syrup   

Instructions: 

1.Marinate the salmon: In a bowl, combine the salmon cubes with soy sauce, sesame oil, rice vinegar, sriracha (if using), garlic, ginger, and honey/agave syrup. Let the salmon marinate for at least 15-20 minutes while you prepare the rest of the ingredients. 

2.Prepare the bowls: Divide the cooked sushi rice between two bowls. Top the rice with the marinated salmon.  

3.Add the veggies: Arrange the edamame, radishes, red cabbage, and cucumber around the salmon in the bowls. 

4.Garnish: Sprinkle the bowls with pieces of nori and chopped spring onions, if using. 

5. Sauce: Mix the ingredients for the poké bowl sauce in a small bowl, then drizzle a bit of the sauce over each bowl. 

6. Serve: Enjoy your Salmon Poké Bowl immediately, savoring the explosion of flavours and textures!
