Oven-baked eggplant 

Ingredients for 4 people 

  • 2 eggplants 
  • 1 red chili pepper 
  • 9 oz chicken breast 
  • Olive oil 
  • 1 clove of garlic 
  • 1 small onion 
  • 1 can of corn 
  • Some grated cheese 
  • A few sprigs of basil 
  • Pepper 
  • Salt 
  • 1 lime 
  • Optional: rice for serving 


Preheat the oven to 390F. Cut the eggplants in half and hollow them out slightly. Heat some olive oil in a pan. Meanwhile, finely chop the onion and garlic. Add them to the heated pan. Cut the chicken breast into cubes and fry until golden brown in the pan, then add the corn. Season it with pepper, salt, lime juice, and some basil. 

Place the eggplants on a baking sheet and distribute the mixture over the eggplants. Sprinkle some cheese on top and bake in the oven for 40 minutes. While it’s in the oven, you can prepare the rice as described on the packaging. Divide the eggplants and rice over four plates. Enjoy your meal!
