Oatmeal cookies with banana 

Ingredients for 20 cookies 

  • 9 oz oats 
  • 4 ripe bananas 
  • 3,5 oz coconut juice 
  • 3,5 oz roughly chopped almonds 
  • 2 tablespoons cookie spices 
  • Pinch of salt 

Preparations 

Before you start, preheat the oven to 350F. Mash the ripe bananas well with a fork and place them in a bowl. Add the coconut juice, almonds, cookie spices, and a pinch of salt. Mix everything well. Shape the cookie dough into small balls of approximately 40 grams each and flatten them on a baking sheet. Finally, bake the cookies for 15 to 20 minutes until golden brown and cooked through. 

Sugar-Free Banana Brownies 

Ingredients for 16 servings 

  • 14 oz almond flour 
  • 5 ripe bananas 
  • 6 eggs 
  • 4,5 oz coconut oil 
  • 2 teaspoons baking powder 
  • 1 teaspoon salt 
  • 5 oz walnuts 
  • 5 oz dark chocolate 
  • 1,7 oz cocoa powder 

Preparations 

Before you start, preheat the oven to 350F. Mash 5 ripe bananas well with a fork and transfer them to a large bowl. Melt the coconut oil and use it to grease your baking pan. Beat the remaining coconut oil together with the 6 eggs.  Pour the mashed bananas into the mixed coconut oil and eggs and stir well. In a separate bowl, combine the baking powder, salt, almond flour, and cocoa powder. Chop the walnuts and add them to the bowl along with the dark chocolate. Pour the banana-egg mixture into the dry ingredients and knead into a moist dough. Transfer the dough to the baking pan, spread it out without pressing it down too much. Bake the brownies for 35 minutes until cooked through. Allow the brownies to cool before serving. Enjoy!
