Healthy cauliflower crust pizza 

For 4 people 

Ingredients for the crust

  • 1 cauliflower 
  • 2 beaten eggs 
  • 3,5 oz cheese 
  • Salt and pepper 
  • 2 tablespoons of oregano 
  • 4 teaspoons of oil 

Topping ingredients

  • Tomato paste 
  • Mozzarella 
  • Pesto 
  • Cherry tomatoes 
  • Grated cheese 
  • Chorizo 
  • Arugula 

Preparations

Before you start, preheat the oven to about 390F. First, wash the cauliflower thoroughly and then cut off the florets. The cauliflower florets need to become cauliflower rice. You can use a blender or food processor to make this. You can also buy cauliflower rice from the supermarket. 

    Steam the cauliflower rice until cooked, for about 5 to 8 minutes, and let it cool completely. Then, place the cooled cauliflower rice in a clean tea towel and squeeze out the excess moisture until the cauliflower rice is dry. It should not be wet. Place the cauliflower rice in a large bowl and add the 2 beaten eggs, cheese, and 2 tablespoons of oregano for extra flavour. Knead it with your hands until it forms a sticky dough. 

      Next, grease the baking paper with oil and spread the dough evenly on the baking sheet to create a nice pizza crust, about 0,4 inches thick. Bake the cauliflower crust for about 25 to 30 minutes until cooked. Finally, top the crust with tomato paste, mozzarella, grated cheese, pesto, cherry tomatoes, arugula, and chorizo. Finish baking the pizza.
