Gado gado 

Ingredients for 4 servings 

  • 10,5 oz rice 
  • 4 eggs (1 per person) 
  • 1 cucumber 
  • 1 carrot 
  • 17,5 oz green beans 
  • 9 oz chicken breast 
  • 9 oz bean sprouts 
  • Prawn crackers 
  • Optional: fried onions 
  • Pepper 
  • Salt 

Peanut sauce: 

  • 1 shallot 
  • 1 tsp sambal 
  • 2 tbsp soy sauce 
  • 9 oz milk 
  • 5 oz peanut butter 
  • 1 tbsp brown sugar 
  • 1 garlic clove 

Preparation

Start by preparing the peanut sauce. Finely chop the shallot, mince the garlic, and add them to a heated pan. Then add the soy sauce and stir well. Once it’s well mixed, add the milk and sugar. Wait until the sugar has melted, then add the peanut butter and sambal. Let the peanut sauce thicken while you prepare the gado gado. In the meantime, you can cook the eggs according to your preference. 

Cook the rice according to the instructions on the package and boil the green beans for about 10 minutes. After a few minutes, add the carrot to the boiling water to cook it until it’s al dente. Heat some oil in a pan and cut the chicken breast into pieces. Cook the chicken until done and season with salt and pepper. Slice the cucumber and carrot into strips, and if needed, cut the green beans into smaller pieces. 

Now you can assemble the dish. Place a portion of rice on a plate and add the chicken, green beans, cucumber, carrot, egg, and bean sprouts. Serve with prawn crackers, fried onions, and homemade peanut sauce.
