Couscous with chicken pesto and feta

Ingredients for 2 people: 

– 150 grams of couscous (about 5.3 oz)   

– Half a vegetable bouillon cube   

– 1 red bell pepper   

– 100 grams of feta (about 3.5 oz)   

– 1 red onion   

– 170 grams of chicken breast (about 6 oz)   

– Arugula   

– 3 teaspoons of green pesto   

– 2 lemon slices   

Preparation: 

1. Crumble the half bouillon cube into a pan and add the couscous. Pour boiling water over it and prepare the couscous according to the instructions on the package.   

 2. Finely chop the onion, cut the red pepper into small cubes, and break the feta into smaller pieces. Cook the chicken breast until fully cooked.  

3. Once the couscous is ready and the chicken is cooked, combine everything in a large bowl. Start by adding the couscous, followed by the other ingredients.  

4. Top it off with some arugula, extra feta, and a lemon slice for a fresh, quick, and delicious meal!
