Ingredients:

  • 0.2 FL. milk
  • 0.2 FL. water
  • 4.5 OZ. Butter
  • 2 tbsp granulated sugar
  • Pinch of salt
  • 9 OZ. flour
  • 4 eggs
  • Oil (for frying)
  • 2 OZ. granulated sugar
  • 1 tsp cinnamon

Preparation:

In a pan, combine milk, water, and butter, and let it melt. Add 2 tablespoons of sugar and a pinch of salt. Bring it to a boil, then remove the pan from the heat. Stir in the flour with a wooden spoon. Place the pan back on low heat and let it cook for another 3 minutes, stirring continuously. Transfer the batter to a mixing bowl and mix until no more steam is emitted. Add the eggs one by one, stirring continuously. Allow the dough to rest for about 20 minutes.

Heat the oil to 320°F. Mix 2 OZ. of sugar and 1 teaspoon of cinnamon on a plate, and prepare another plate with kitchen paper. Use two teaspoons to scoop a bit of dough from the bowl and place it in the hot oil. The ball should start to sizzle immediately. Make a few balls and fry them, but avoid putting too many at once as they will expand. Fry the balls for 3 to 5 minutes until golden brown. Drain them on the kitchen paper and then roll them in the cinnamon sugar mixture.
