Cauliflower wraps with jalapeño sauce 

Ingredients for 4 people 

  • 1 carrot 
  • Half an onion 
  • ¼ of a cabbage 
  • 1 tsp oregano 
  • 5 tbsp white wine vinegar 
  • 1 tsp sugar 
  • 1 cauliflower 
  • 4 tbsp sunflower oil 
  • 2 tbsp taco seasoning 
  • Half a jalapeño pepper 
  • 5 tbsp mayonnaise 
  • 3 tbsp Greek yogurt 
  • 12 mini wraps 
  • Pinch of salt 

Preparations

Preheat the oven to 290F. Grate the carrot, finely chop the cabbage, and dice the onion. Put them all in a bowl and add oregano and salt. Then, add vinegar and sugar and mix everything well together. 

Cut the cauliflower into florets and place them in a bowl. Add taco seasoning and oil. Mix well and spread it evenly on a baking sheet. Bake in the oven for 35 minutes, flipping halfway through, until cooked thoroughly. 

Finely chop the jalapeño and mix it with mayonnaise and Greek yogurt in a separate bowl. Take the wraps and put of the jalapeño sauce on each. Then, add the roasted cauliflower and top it with the cabbage salad. If you like it extra spicy, you can add some extra jalapeño’s on top.
