Caprese stuffed eggplant

Ingredients: 

  • 1 large eggplant 
  • 1 large tomato, diced

  • Salt and pepper to taste 
  • Extra virgin olive oil for drizzling 

Instructions: 

  • Preheat your oven to proximately 400°F. 
  • Cut the eggplant in half lengthwise and score the flesh in a crosshatch pattern, being careful not to cut through the skin. 
  • Place the eggplant halves on a baking sheet lined with parchment paper. Drizzle each half with a bit of olive oil and sprinkle with salt and pepper. 
  • Roast the eggplant in the preheated oven for 20-25 minutes, or until the flesh is tender and golden brown. 
  • While the eggplant is roasting, prepare the filling. In a mixing bowl, combine the diced tomato, diced mozzarella cheese, and chopped basil leaves. 
  • Season the mixture with salt and pepper to taste, and gently toss to combine. 
  • Once the eggplant halves are cooked, remove them from the oven and let them cool slightly. 
  • Using a spoon, carefully scoop out some of the flesh from the center of each eggplant half to create a cavity for the filling. 
  • Spoon the tomato and mozzarella mixture into the hollowed-out center of each eggplant half, dividing it evenly between them. 
  • Drizzle each stuffed eggplant half with balsamic glaze and a drizzle of extra virgin olive oil. 
  • Garnish with additional chopped basil leaves, if desired, for a pop of color and freshness. 
  • Serve the Caprese Stuffed Eggplant halves immediately as a flavorful and satisfying meal.
