Bell pepper soup 

Ingredients for 4 people 

  • 5 red bell peppers 
  • 2 vine tomatoes 
  • 1 onion 
  • 2 cloves of garlic 
  • 2 sprigs of thyme 
  • Dash of olive oil 
  • 27 fl oz vegetable broth 
  • 1 lemon 
  • Pepper 
  • Salt 
  • 4 slices of bread 
  • Herb butter 
  • Optional: crème fraiche 


Heat a dash of olive oil in a soup pot, finely chop the onion and mince the garlic. Add the onion to the pot and later add the garlic. Meanwhile, dice the bell peppers and tomatoes, and add them to the pot. Then, pour in the vegetable broth and add the thyme. Bring it to a boil and let it simmer for 15 minutes. 

After 15 minutes of cooking, puree the mixture until smooth. Season it with lemon juice, pepper, and salt to taste. Toast the bread and serve it with herb butter and the soup. You can optionally add some crème fraiche to the soup. Enjoy your meal!
