Avocado salad with shrimp 

Ingredients for 2 people: 

  • 1 avocado 
  • 1 mango 
  • 7 oz shrimp 
  • 5 oz lettuce of your choice 
  • 2 handfuls of arugula 
  • 1 lime 
  • Dash of soy sauce 
  • Olive oil 
  • Pepper 
  • Salt 
  • Optional: some unsalted cashews 


Heat some olive oil in a pan and sauté the shrimp. Slice the avocado and mango into slices and set aside. Squeeze the lime into a small bowl and add a dash of soy sauce. Season with pepper, salt, and optionally some olive oil. Mix well and taste until you are satisfied with the flavour. 

Slice the lettuce and divide it onto two plates. Then, add some arugula to each plate and sprinkle the sautéed shrimp on top. Arrange the mango and avocado slices over the lettuce and drizzle the dressing over the salad. If desired, you can sprinkle some chopped cashews on top. Enjoy your meal!
