Tomato soup with pesto

Ingredients for 2 people: 

– 400 grams of tomatoes (about 14 oz)   

– 600 ml of broth (about 20 fl oz)   

– 2 tablespoons of pesto   

– 1 clove of garlic   

– 1 onion   

– 2 slices of bread   

– Fresh basil   

– Olive oil   

Preparation: 

1. Cut the tomatoes, onion, and garlic into pieces. They don’t need to be finely chopped as you will puree the soup later. Heat some olive oil in a large soup pot and sauté the tomatoes, onion, and garlic for about 2-3 minutes. 

2. Add the broth to the pot and bring the soup to a boil. Let it simmer gently for 15 to 20 minutes. Then, stir in the pesto and use an immersion blender to puree the soup until smooth. 

3. Toast the slices of bread and cut them into small cubes to make croutons.                              
 

4. Serve the soup with the croutons and top with fresh basil for extra flavor
