Stuffed sweet potato 

Ingredients for 4 people

  • 4 sweet potatoes 
  • 3,5 oz kidney beans 
  • 3,5 oz corn 
  • 4 tomatoes 
  • 1 lime 
  • 3,5 fl oz crème fraiche 
  • Olive oil 
  • Pepper 
  • Salt 
  • Parsley 
  • Some Parmesan cheese 

Preparation

Preheat the oven to 350F Clean the sweet potatoes thoroughly and prick a few holes in each potato. Take an oven dish and place the potatoes in it. Drizzle some olive oil over them and season with salt and pepper. Place them in the oven for 45 minutes. 

Meanwhile, prepare the filling. Cut the tomatoes into cubes and drain the kidney beans and corn well. Once they are drained, put them together in a bowl and mix well. Add the lime juice and season with salt and pepper to taste. 

When the potatoes are done baking, make a small slit in each potato to create space for the filling. Then, divide the filling mixture over the potatoes and top it with crème fraiche, parsley, and some Parmesan cheese.
