Spicy shrimp tacos with avocado crema

Ingredients:
For the spicy shrimp:- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- Juice of 1 lime
- 1 ripe avocado, peeled and pitted
- 1/4 cup Greek yogurt
- Juice of 1 lime
- 2 tablespoons chopped fresh cilantro
- Salt and pepper to taste
- 8 small corn or flour tortillas
- Shredded lettuce
- Diced tomatoes
- Sliced red onion
- Sliced jalapeños (optional)
- Fresh cilantro leaves
- Lime wedges
Instructions:
- In a medium bowl, combine the peeled and deveined shrimp with olive oil, minced garlic, chili powder, smoked paprika, cayenne pepper, salt, pepper, and lime juice. Toss until the shrimp are evenly coated in the spice mixture. Let marinate for 15-20 minutes.
- While the shrimp are marinating, prepare the avocado crema. In a blender or food processor, combine the ripe avocado, greek yogurt, lime juice, chopped cilantro, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.
- Heat a large skillet or grill pan over medium-high heat. Add the marinated shrimp to the skillet and cook for 2-3 minutes per side, or until they are pink and opaque.
- Warm the tortillas according to package instructions.
- To assemble the tacos, place a spoonful of the avocado crema on each tortilla. Top with shredded lettuce, diced tomatoes, cooked shrimp, sliced red onion, sliced jalapeños (if using), and fresh cilantro leaves.
