Mini raspberry and mint charlottes 

Delight in the refreshing taste of this raspberry and quark dessert, a perfect blend of creamy sweetness and fruity tang. With its elegant presentation and delicious flavors, this treat is sure to impress your guests and satisfy your sweet tooth.

Ingredients for 4 servings: 

  • 1 packet of ladyfingers 
  • 4,5 fl oz whipping cream 
  • 5 fl oz quark (a type of soft cheese) 
  • 4 gelatin leaves 
  • 5 oz raspberries 
  • 1,5 oz sugar 

Instructions: 

1. Place some cold water in a bowl and soak the gelatin leaves in it. In a saucepan, combine 1,5 fl oz of water, sugar, and 1,5 oz of raspberries. Heat this mixture until the sugar is dissolved and the raspberries start to break apart. 

2. Meanwhile, the gelatin leaves should have softened. Squeeze out the excess water and add them to the warm mixture, allowing the gelatin to melt. Let it cool. 

3. While the mixture is cooling, whip the whipping cream until it thickens. Mix in the quark until well combined. Take a few raspberries aside for decoration, and mash the remaining raspberries in a bowl to create a jam-like consistency. Add the mashed raspberries to the whipped cream mixture and mix well. Finally, add the cooled gelatin mixture and stir until evenly incorporated. 

4. Take 4 ring molds and line the edges with ladyfingers. You can trim the ladyfingers to fit if desired. Fill the molds with the raspberry mixture and top with raspberries. Place the molds in the refrigerator for at least 3 hours to set. You can leave them in longer if desired. 

5. Once set, remove the molds, garnish with mint leaves, and serv
