Buddha bowl
Ingredients for 4 people:
- ½ red cabbage
- 2 tbsp olive oil + 1 tbsp olive oil
- 1 tsp paprika powder
- 400 g grated carrots
- ½ tsp cumin
- Pinch of chili powder
- 250 g mushrooms
- 500 g cherry tomatoes
- 100 g couscous
- 100 g quinoa
- 1 vegetable stock cube
- Pinch of salt and pepper
- 400 g mixed salad
- 50 g pumpkin seeds
- 2 tsp sesame seeds
- 24 meatballs
For the dressing:
- 3 tsp honey
- 4 tbsp mustard
- 2 tbsp water
Preparation
Prepare the couscous and quinoa according to the package instructions, using half of the vegetable stock in the water. Meanwhile, slice the mushrooms and halve the cherry tomatoes. Heat 2 tbsp of olive oil in a pan, and sauté the mushrooms with paprika powder, cumin, and chili until the mushrooms are golden brown, then turn off the heat. In a separate pan, cook the meatballs.
For the dressing, simply mix the honey, mustard, and water in a small bowl until smooth.
Divide the salad, couscous, quinoa, vegetables, pumpkin seeds, and meatballs evenly among 4 bowls. Top with sesame seeds and drizzle with the dressing. Enjoy!
