A colourfull poke bowl
Ingredients (for 4 people):
– 250 grams of sushi rice (about 8.8 oz)
– 1 cucumber
– 2 avocados
– 250 grams of edamame beans (about 8.8 oz)
– 300 grams of salmon (about 10.5 oz)
– Sesame seeds
– Seaweed sheets
– Edible flowers (optional)
Dressing:
– 6 tablespoons mayonnaise (about 3 fl oz)
– 2 teaspoons wasabi or siracha paste
How to make it:
- 1. Cook the sushi rice according to the instructions on the package. Cut all the ingredients (cucumber, avocado, and salmon) into small pieces, making sure they aren’t too large.
- 2. Break the seaweed sheets into smaller pieces to use as a topping for your poke bowl later.
- 3. Once the rice is cooked, you can choose to let it cool completely or keep it slightly warm. When the rice has reached your preferred temperature, divide it evenly into 4 bowls or plates. Add all the toppings on top of the rice, arranging them as you like.
- 4. For the dressing, you’ll only need two ingredients. Mix the mayonnaise and wasabi (or siracha) in a small bowl until smooth. Adjust the amount of spiciness to your taste, depending on how spicy you prefer it.
- 5. Finally, add the edible flowers on top for a vibrant finish. Serve with a bottle of soy sauce on the side and enjoy your colourful poke bowl!
