Sophisticated twist on banana bread

  • 4 ripe bananas 
  • 3 eggs 
  • 2 tbsp filter coffee 
  • 2 tsp baking powder 
  • 3 dates 
  • 5.29 oz all-purpose flour 
  • 3.88 oz almond meal 
  • 1 tsp cinnamon 
  • Optional: nuts 

Method: 

  • Preheat the oven to 356 degrees Fahrenheit and allow the dates to soften slightly in warm water. 
  • In a mixing bowl, combine 3 bananas, eggs, cinnamon, coffee, and chopped dates. Mix until a smooth batter forms. 
  • Sift in the flour, baking powder, and almond meal. Stir until well combined. 
  • Grease a loaf tin thoroughly to prevent sticking. Pour the batter into the tin. 
  • Slice the remaining banana in half lengthwise and place it on top of the batter. 
  • Bake for 50 minutes until golden brown and a skewer inserted into the center comes out clean. 
  • Allow the banana bread to cool slightly before slicing and serving.
