Green avocado-pistachio muffin 

 
Delight in the unique blend of creamy avocado and nutty pistachios with these green avocado-pistachio muffins, a healthy treat that’s as flavorful as it is visually appealing. Perfect for breakfast or a snack, these muffins offer a moist, delicious twist on traditional baked goods. 

 
Ingredients for 12 muffins 

  • 7 OZ. Spelt flour 
  • 5 OZ. Stevia 
  • 3 tsp baking powder 
  • 6 OZ. peeled pistachios 
  • 9 OZ avocado 
  • 0.3 FL. oat milk 
  • 2 OZ. rapeseed oil 
  • 1 tbsp pistachio cream 
  • 2 FL. lemon juice 
  • 1 tbsp lemon zest 

Instructions 

  • Preheat the oven to 356°F (top and bottom heat). Grease the muffin tin with fat. 
  • Mix the spelt flour, stevia, baking powder, and salt in a mixing bowl. 
  • Finely chop the pistachios. 
  • In a powerful blender, combine the avocado, oat milk, oil, and lemon juice. Puree until smooth. 
  • Add the avocado mixture to the flour mixture and mix until a smooth dough forms. 
  • Distribute the dough evenly in the muffin tin and bake for 60-70 minutes in the oven. 
  • Insert a skewer into the muffins; if no dough residue sticks to the skewer, you can remove the muffins from the oven. 
  • Allow the muffins to cool first. Optionally, decorate the muffins with a little pistachio cream, chopped pistachios, and edible flowers. 
  • Enjoy your meal!
