Protein-rich banana bread 

Ingredients: 

– 150g whole wheat flour 

– 3 (large) ripe bananas 

– 2 handfuls of unsalted nuts 

– 3 tbsp flaxseeds 

– A splash of plant-based milk, of your choice 

– 3 tsp cinnamon 

– 1 scoop vanilla protein powder (chocolate flavour works well too) 

– 1/2 packet of baking powder 

– Pinch of salt 

Instructions: 

1. Preheat the oven to 180°C (350°F). Grease the baking tin or line it with parchment paper. 

2. Peel the bananas, break them into pieces, and mash them with a fork. 

3. Place the flaxseeds in a small bowl and add water until they are fully submerged. Let them sit until the water is absorbed and it has a gel-like consistency. 

4. Chop the nuts and add them to the mashed bananas.  

5. Add the whole wheat flour, flaxseed mixture, plant-based milk, cinnamon, protein powder, baking powder, and salt. Mix the batter until smooth. 

6. Pour the batter into the baking tin and bake for 45 minutes. 

7. Let the bread cool completely before removing it from the tin.
