Lemon Bars with Blueberries 

Ingredients for 9 pieces:

  • 200 g sugar
  • 2 eggs
  • 4 tbsp flour
  • 1 tsp baking powder
  • Pinch of salt
  • 2 lemons
  • Blueberries

For the crust

  • 110 g butter
  • 125 g flour
  • 50 g sugar

Preparation

Preheat the oven to 180°C (350°F) and combine all the ingredients for the crust in a bowl. Mix until it forms a crumbly dough. Grease a baking dish or line it with parchment paper and spread the dough evenly over the bottom of the dish. Bake for 25 minutes.

Grate the lemons and squeeze out the juice. In a separate mixing bowl, combine all the remaining ingredients (except the blueberries) and mix until smooth. Add the lemon zest and juice and mix again.

Remove the baking dish from the oven and pour the lemon mixture over the baked crust. Lower the oven temperature to 160°C (320°F) and bake for another 40 minutes. Once baked, scatter the blueberries on top and let it cool completely. Place in the fridge to chill.

Once fully cooled, cut into 9 squares and enjoy!
