Green avocado-pistachio muffins

Ingredients for 12 muffins:
– 200g spelt flour
– 150g stevia
– 3 tsp baking powder
– 170g pistachios, shelled
– 250g avocado
– 175ml oat drink
– 60g canola oil
– 1 tbsp pistachio cream
– 60ml lemon juice
– 1 tbsp lemon zest
Instructions:
1. Preheat the oven to 180°C (top and bottom heat). Grease the muffin tin with some oil.
2. In a mixing bowl, combine spelt flour, stevia, baking powder, and salt. Finely chop the pistachios.
3. In a powerful blender, blend the avocado, oat drink, oil, and lemon juice until smooth.
4. Add the avocado mixture to the flour mixture and stir until a smooth batter forms.
5. Evenly distribute the batter into the muffin tin and bake for 60-70 minutes. To check for doneness, insert a knife into the muffins. If it comes out clean, they’re ready.
6. Let the muffins cool before removing them from the tin. Optionally, decorate with pistachio cream, chopped pistachios, and edible flowers.
