Garlic potatoes with spring onion

Ingredients for 2 people:

– 500 grams of potatoes (baby potatoes also work) (17,3 oz)

– 2 cloves of garlic

– 50 grams of Parmesan cheese (about 1.75 oz)

– 3 tablespoons of olive oil

– Pepper

– 2 spring onions or basis, thinly sliced

Preparation:

1. Preheat the oven to 200°C (about 390°F). Boil water in a pot and add the potatoes. Cook for about 7 minutes, then drain and let them cool. Once cooled, cut the potatoes into halves or quarters, depending on their size.

2. In a small bowl, mix the pressed garlic, olive oil, and pepper. Place the potatoes in an oven dish, pour the garlic-oil mixture over them, and toss to coat.

3. Sprinkle the parmesan cheese over the potatoes and mix everything well. Bake the potatoes in the oven for 25 minutes. After about 15 minutes, stir them to ensure even cooking, then continue baking for another 10 minutes until they are soft and golden.

4. Once done, sprinkle some more parmesan cheese and the sliced spring onions on top.

Enjoy your delicious garlic potatoes!
