Fish burger with salsa

Ingredients for 4 people:
– 2 tablespoons of olive oil
– Iceberg lettuce
– 4 cod burgers
– 4 hamburger buns
– 4 tomatoes
– Some raw veggies (red cabbage)
– 1 avocado
– 1 red bell pepper
– 10 grams of parsley
– 1 lime
– 3 tablespoons of mayonnaise
– Pepper
– Salt
– Fries
Preparation:
1. Slice one tomato into thin slices and chop the remaining three tomatoes into small cubes. Also, chop the red bell pepper and avocado into small cubes.
2. Finely chop the parsley, zest the lime, and squeeze the lime juice. In a bowl, mix the diced tomatoes, bell pepper, avocado, half of the parsley, 1 tablespoon of lime juice, and some lime zest. Stir well and season with pepper and salt to taste. Mix the other half of the parsley with the mayonnaise.
3. Prepare the fries according to the package instructions and heat the olive oil in a pan and cook the cod burgers until fully done.
4. Slice the hamburger buns in half and start assembling the burgers. First, layer some iceberg lettuce on the bottom bun, followed by the tomato slices, the cod burger, parsley-mayo sauce, salsa, and some red cabbage. Place the top half of the bun on top.
5. Serve the fish burgers with fries and enjoy!
