Cauliflower tacos 

Ingredients: 

– 1 carrot   

– Half an onion   

– 1 cauliflower   

– 2 tablespoons taco seasoning   

– 1 teaspoon oregano   

– 1 teaspoon sugar   

– 5 tablespoons white wine vinegar (about 2.5 fl oz)   

– 1 tablespoon jalapeño pepper   

– 5 tablespoons mayonnaise (about 2.5 fl oz)   

– 3 tablespoons Greek yogurt (about 1.5 fl oz)   

– 12 small tortilla wraps   

Preparation:  

1. Mix the carrot with the onion and oregano, then knead everything with salt. Let it sit for 10 minutes. Drain the liquid and add the vinegar and sugar to the vegetables. Knead everything briefly and set aside. Preheat the oven to 200°C (about 390°F). 

2. Mix the cauliflower with sunflower oil and taco seasoning. Roast the cauliflower in the oven for about 35 minutes until golden and cooked through. Turn halfway to ensure even cooking. 

3. Mix the jalapeños with the mayonnaise and yogurt. Warm the tortilla wraps for about 20 seconds in a hot, dry pan, or toast them for 10 seconds in a toaster. Spread the wraps with the jalapeño sauce and place the roasted cauliflower on top. 

4. Add the cabbage salad on top of the cauliflower and, if desired, drizzle with more jalapeño sauce.
