A healthy bundt cake

Ingredients:

– 2 oranges

– 4 eggs

– 2 ripe bananas

– 150 ml sunflower oil

– 250 g almond flour

– 200 g wheat flour

– 3 tsp baking powder

– 150 g mango

– 200 g cream cheese

Preparation:

Preheat the oven to 175°C (350°F) and grate the zest of the oranges, saving the zest for later. Juice one of the oranges. Separate the eggs and beat the egg whites until stiff, setting aside the yolks. In a large bowl, combine 1 tsp of orange zest, 2 tbsp of orange juice, the egg yolks, and the oil.

Mix everything well until you get a smooth batter. Then add the almond flour, 120 g of wheat flour, and the baking powder. Once the batter is smooth, gently fold in the beaten egg whites. Puree the mango in a separate bowl until smooth, then add 80 g of wheat flour. Stir in 100 g of cream cheese.

Pour half of the batter into a greased bundt pan. Smooth it out, then spread the mango-cream cheese mixture in the center. Pour the remaining batter into the pan and bake for about 55 minutes. To check if it’s done, insert a skewer into the cake—if it comes out clean, the cake is ready.

Remove the cake from the oven and let it cool in the pan for 30 minutes. After that, take the cake out of the pan and let it cool for another 30 minutes. Meanwhile, mix the remaining cream cheese with the rest of the orange zest and 4 tbsp of orange juice. Stir well, and you can always add more zest or juice for extra flavor if desired.

Spread the topping over the bundt cake, slice, and enjoy!
